Nothing can beat sweet flavour of Jaggery. It has certain minerals which are beneficial for the body. It’s taseer is hot. Jaggery is a healthy alternative to white sugar.
Jaggery has a hot potency. It is consumed specially in winter as it is known to produce heat in the body. The bad thing is that in dry weather, jaggery becomes hard and is difficult to break or cut. To soften the hard Jaggery/Gur, we can use the following tricks
1st is that in microwave safe bowl, microwave the jaggery pieces for 15 secs. only and not more. You will find that jaggery becomes soft and you can handle it easily. You can cut it to break it easily.
2nd tip is that to soften the hard jaggery, heat the jaggery on gas burner for few secs.
Edible Gum is called Gondh. In Maharashtra, it is called Dink. Gondh has many nutritional value and has Ayurvedic benefits. It is tasteless and odourless and turns to gel like substance. It helps stimulate the immune system.
The problem is that when we fry Gondh, it absorbs too much ghee or oil and it increases cholesterol level. To make Gondh or Dink cholesterol free, we use the following tip.
We can microwave Gondh in microwave safe bowl for 1 minute and crush it in small grinder or Hamam dasta or Kharal. Then the crushed powder can be fried in 1 tbsp ghee or oil and be used to make katira or laddu.
